About
This Ultimate Mediterranean Cod draws from different Mediterranean cuisines and styles, but it all adds up to something so, so flavorful! The delicate and sweet cod fillets are braised in a hearty and rich tomato sauce, and then are served with a Florentine-style bed of zesty spinach. Tender, juicy, and perfectly balanced between sweet and savory, Ultimate Mediterranean Cod really does deliver up the best of what the turquoise sea offers.
Ingredients
- 1 cup jarred marinara sauce
- 2 medium zucchinis, chopped
- 4 fillets cod (about 1 1/2 pounds)
- salt, to taste
- pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, chopped
- 1/4 teaspoon crushed red pepper
- 1 pound fresh spinach
- whole-wheat dinner rolls, optional, to taste, for serving
Directions
Step 1 -In a skillet over medium heat, add the marinara sauce and the zucchini and bring the mixture to a simmer.
Step 2 -Season the cod fillets with the salt and the pepper on both sides.
Step 3 -Add the fillets to the sauce, cover the skillet, and cook until the fillets are just opaque throughout and reach an internal temperature of 145 degrees F, about 7 minutes.
Step 4 -While the cod cooks, in a 5-quart pot over medium heat, add the olive oil.
Step 5 -Add the garlic and the crushed red pepper to the hot oil and cook, while stirring, until fragrant, about 1 minute.
Step 6 -Add the spinach and the salt to the garlic-crushed red pepper mixture.
Step 7 -Cover the pot and cook, while stirring occasionally, until the spinach has wilted, about 5 minutes.
Step 8 -Plate the cod fillets with the zucchini and the sauce.
Step 9 -Serve with the spinach and the whole-wheat rolls.
