Ingredients
- 1 1/2 cups water
- 1/4 cup plus 1 tablespoon butter
- 1 (6-ounce) package quick-cooking stuffing mix
- 1 medium onion, diced
- 3 stalks celery, diced
- 1 (10.5-ounce) can low-sodium cream of chicken soup
- 1/2 (10.5-ounce) can low-sodium cream of mushroom soup
- 1 (8-ounce) container sour cream
- 1 whole cooked rotisserie chicken, skinned, de-boned, and shredded
- salt, to taste
- ground black pepper, to taste
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Spray a 9x13-inch baking dish with cooking spray.
Step 3 -In a saucepan over medium heat, combine the water and the butter and bring to a boil.
Step 4 -Add the stuffing mix to the saucepan and stir to combine.
Step 5 -Transfer the saucepan from the heat, cover, and let it sit until the water is absorbed, about 5 minutes.
Step 6 -In a large skillet over medium heat, melt the remaining butter.
Step 7 -Add the onion and the celery to the butter and cook, stirring frequently, until softened, about 5-10 minutes.
Step 8 -Fluff the stuffing with a fork.
Step 9 -In a large bowl, combine the cream of chicken soup, the cream of mushroom soup, and the sour cream and mix until well combined.
Step 10 -Spread the shredded chicken in an even layer over the bottom of the prepared baking dish.
Step 11 -Spread the onion mixture in an even layer over the chicken and sprinkle it with the salt and the pepper.
Step 12 -Spread the soup mixture in an even layer over the top of the onion mixture.
Step 13 -Sprinkle the stuffing mixture in an even layer over the soup mixture.
Step 14 -Bake the casserole until the filling is bubbly and the topping is golden-brown, about 1 hour.
Step 15 -Serve.
