So, we hear that the South likes a good sheet cake. Who can blame them? They're very scrumptious and make so much... which is perfect for that small-town hospitality. We also know that there are many variations to choose from, but once you taste this Star-of-the-South Sheet Cake, you might never return to any other recipe! Just look at it! Can't you already taste that moist chocolate cake swimming in that rich, fudgy frosting?! One of the best parts about this treat is that it's completely homemade, from the top to the bottom, and you'll definitely be able to taste the difference. And once you taste the Star-of-the-South Sheet Cake, you'll understand its name. No other sheet cake can compare!
Ingredients
- For the cake:
- 2 cups sugar
- 2 cups all-purpose flour, sifted
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- salt, to taste
- 2 sticks butter
- 1 cup water
- 1/4 cup cocoa, sifted
- 1/2 cup buttermilk
- 2 eggs
- 1 teaspoon vanilla
- For the frosting:
- 1 stick butter
- 1/4 cup cocoa, sifted
- 1/3 cup milk
- 3 cups powdered sugar, sifted
- 1 teaspoon vanilla
Directions
Step 1 -Preheat the oven to 475 degrees F.
Step 2 -Coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a large bowl, add the sugar, the flour, the cinnamon, the baking soda, the baking powder, and the salt and whisk to combine.
Step 4 -In a saucepan over medium-high heat, add 2 sticks of the butter, the water, and 1/4 cup of the cocoa and cook, stirring constantly, until it is boiling.
Step 5 -Transfer the cocoa mixture from the heat then pour it over the flour mixture and blend well.
Step 6 -Add the buttermilk, the eggs, and 1 teaspoon of the vanilla to the batter and mix. Be sure not to overmix.
Step 7 -Pour the batter into the prepared baking dish and bake until a toothpick inserted into the center comes out mostly clean, about 15-20 minutes.
Step 8 -Transfer the baking dish to a wire rack to let the cake slightly cool.
Step 9 -In a saucepan over medium heat, add the remaining butter, the remaining cocoa, and the milk and heat, while stirring constantly, until it is boiling.
Step 10 -Transfer the frosting mixture from the heat and add the powdered sugar and the remaining vanilla.
Step 11 -Stir the frosting until the powder sugar has dissolved, then let it cool slightly.
Step 12 -Pour the slightly cooled frosting over the slightly cooled cake.
Step 13 -Slice and serve.
