Dreamy avocados, fresh and clean mini cucumbers, and feed-my-face feta cheese are enhanced with a healthy pampering of a lemony-dill dressing for great salad "in-spa-ration." Relax and enjoy your time with Spa Day Salad. Who knew how regenerating such an easy meal could be?!
Ingredients
- 2 cups mini cucumbers, diced into 1/4-inch-thick pieces
- 1/4 cup fresh dill, finely chopped and loosely packed, plus more, to taste, for garnish
- 2 ounces feta cheese, finely crumbled
- 1/4 cup lemon juice
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon kosher salt, plus more, to taste
- 1/4 teaspoon ground black pepper, plus more, to taste
- 2 large avocados, diced into 1/4-inch-thick pieces
- lemon wedges, to taste, for garnish
Directions
Step 1 -In a large bowl, add the cucumbers, 1/4 cup of the dill, the feta cheese, the lemon juice, and the olive oil and toss to combine.
Step 2 -Add 1/4 teaspoon of the salt and 1/4 teaspoon of the black pepper to the cucumber mixture and stir to combine.
Step 3 -Add the avocados to the cucumber mixture and gently fold until they are just combined.
Step 4 -Taste the salad and season with the extra salt and the extra black pepper, as needed. Stir to combine.
Step 5 -Serve the salad, garnished with the extra dill and the lemon wedges.
