Chicken cacciatore can be translated as "hunter's chicken," but there's no need to go hunting for good flavors with this Slow Cooker Chicken Cacciatore. In fact, you don't even need to pretend to hunt! Just let the slow cooker do the work. It'll deliver ultra-juicy and super succulent chicken thighs with vibrant green peppers, onions, and tomatoes for a touch of uplifting richness with minimal effort from you. The sauce is thick and savory, perfect for draping over mashed potatoes, rice, or noodles. Slow Cooker Chicken Cacciatore takes things slow, but the flavors come at you fast!
Ingredients
- 12 chicken thighs, boneless and skinless
- 2 medium green bell peppers, chopped
- 1 (14.5-ounce) can diced tomatoes with basil, oregano, and garlic
- 1 (6-ounce) can tomato paste
- 1 medium onion, chopped
- 1/2 cup low-sodium chicken broth
- 1/4 cup dry red wine, can substitute low-sodium chicken broth
- 3 cloves garlic, minced
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water, cold
- rice, optional, to taste, cooked and hot, for serving
- fresh parsley, optional, to taste, minced, for garnish
Directions
Step 1 -In a 4-5-quart slow cooker, add the chicken thighs.
Step 2 -In a medium bowl, add the green bell peppers, the tomatoes with basil, oregano, and garlic and their juices, the tomato paste, the onions, the chicken broth, the wine, the garlic, the salt, and the black pepper and stir to combine.
Step 3 -Pour the tomato mixture over the chicken thighs in the slow cooker.
Step 4 -Cover the slow cooker and cook until the chicken thighs are tender and cooked through, about 8-10 hours on low.
Step 5 -In a small bowl, add the cornstarch and the water and whisk until combined and smooth.
Step 6 -Gradually add the slurry mixture to the chicken mixture, while stirring to combine.
Step 7 -Cover the slow cooker and cook until the sauce is thickened, about 30 minutes on high.
Step 8 -Serve over the rice and garnish with the parsley.
