Well, give breakfast its due diligence again with these Quick & Healthy Egg Muffins. In a little over 30 minutes, you can scramble up this take-and-run, get-you-going handful and be on your way. Healthy eggs grounded with your choice of hearty meat, a little spice, and melty cheese come together to make you some bites that will give you that nice burst of energy you're craving. Whether you make them on the spot or a day or so ahead, you'll always be prepared with the Quick & Healthy Egg Muffins. Everyone will walk away each morning knowing they started their day off right. Make your breakfast important again!
Ingredients
- 10 large eggs
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder, optional
- 1 1/2 cup diced ham, or 8 slices cooked and crumbled bacon, or 1/2 pound cooked sausage
- 1/2 red bell pepper, diced
- 3 tablespoons white onion, minced
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Generously spray a 12-cup muffin pan with nonstick cooking spray.
Step 3 -In a large bowl, add the eggs, the black pepper, the salt, and the garlic powder and whisk to combine.
Step 4 -Evenly divide the ham, the red bell pepper, the onion, the cheddar cheese, and the mozzarella cheese into each of the prepared muffin cups.
Step 5 -Evenly pour the egg mixture over the top of the cheese mixture.
Step 6 -Bake the egg muffins, uncovered, until the eggs are set, about 22-25 minutes.
Step 7 -Transfer the egg muffins to a large serving platter and serve immediately.
