Don't-Mess-With-Texas Cake is a delightfully chocolatey treat; a truly incredible experience for those obsessed with chocolate. The fizz from a fruity, spicy cola elevates this tender cake, adding new dimensions to the sweet chocolate flavor. Topped with melty, chocolate fudge frosting and crunchy, toasted pecans, Don't-Mess-With-Texas Cake is a treat with a taste the size of... well, a very large state indeed!
Ingredients
- 1 1/2 cups Dr Pepper®
- 1 cup vegetable or canola oil
- 1/2 cup unsweetened cocoa
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup light brown sugar, firmly packed
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon table salt
- 1/2 cup buttermilk
- 2 large eggs, lightly beaten
- 2 teaspoons vanilla extract
- fudge icing, to taste, homemade or store-bought
- 1 1/2 cups pecans, toasted and chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly grease a 17 1/2-inch x 12 1/2-inch sheet pan.
Step 3 -In a medium saucepan over medium heat, add the soda, the oil, and the cocoa and stir to combine.
Step 4 -Cook the soda mixture, while stirring often, until it comes to a boil.
Step 5 -Transfer the saucepan from the heat.
Step 6 -Allow the soda mixture to cool enough so it will not scramble the eggs.
Step 7 -In a large bowl, add the flour, the granulated sugar, the brown sugar, the baking soda, and the salt and whisk to combine.
Step 8 -Add the soda mixture to the flour mixture and whisk to combine until blended.
Step 9 -Add the buttermilk, the eggs, and the vanilla to the soda mixture, whisking to combine.
Step 10 -Pour the batter into the prepared sheet pan.
Step 11 -Bake until a wooden toothpick inserted into the center comes out clean, about 18-22 minutes.
Step 12 -Pour the fudge icing over the warm cake and spread it out evenly.
Step 13 -Sprinkle the cake with the pecans.
Step 14 -Allow the cake to cool completely in the pan, about 1 hour.
Step 15 -Slice and serve.
