Martha Washington's Famous Apple Pie Cookies

Martha Washington's Famous Apple Pie Cookies are as American as... well, you know. Frankly though, Martha Washington's Famous Apple Pie Cookies might be a bit better than an apple pie. These little bites of goodness are buttery and tender, with notes of smoky brown sugar, maple syrup, and warm cinnamon! The apples are jammy and the icing on top is creamy and smooth! Celebrate American favorites in a new form with these treats!
Ingredients
- For the cookies:
- 1 stick unsalted butter, melted
- 3/4 cup brown sugar
- 2 tablespoons maple syrup, optional
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 3/4 cup rolled oats
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup apples, peeled and finely chopped
- 1 tablespoon lemon juice
- For the white chocolate drizzle:
- 1/3 cup white chocolate chips
- 1 teaspoon coconut oil
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large bowl, add the melted butter, the brown sugar, the maple syrup, the egg, and the vanilla extract and whisk to combine until smooth.
Step 3 -In a separate bowl, add the all-purpose flour, the whole-wheat flour, the rolled oats, the cinnamon, the baking soda, and the salt and whisk to combine.
Step 4 -Add the flour mixture to the butter mixture and mix just until combined into a cookie dough.
Step 5 -In a bowl, add the apples and the lemon juice and toss lightly to coat.
Step 6 -Allow the apples to soak for 2-3 minutes.
Step 7 -Drain the apples, then add them to the cookie dough and fold to combine.
Step 8 -Spoon the cookie dough onto a baking sheet, forming 12 evenly-sized balls.
Step 9 -Bake until the cookies are just set, about 12-14 minutes.
Step 10 -Allow the cookies to cool slightly.
Step 11 -In a microwave-safe bowl, add the white chocolate and the coconut oil and microwave in 20-second increments, while stirring in between increments, until melted and smooth, about 1 minute.
Step 12 -Drizzle the white chocolate mixture over the cookies.
Step 13 -Serve.
