You have to try this Killer Tuscan Chicken! It's sure to impress even your pickiest, fanciest guest to ever sit 'round your table. The finest chicken breasts get seasoned just right, then cooked to the highest standard in some bubbling melted butter. Then to ensure that five-star quality is really there, there's a creamy, veggie-filled, white sauce to spoon all over that perfect poultry. Sounds pretty high-profile, huh? Well, pinkies up to Killer Tuscan Chicken! Getting rid of all the dapper dinnertime doubters forever!
Ingredients
- 1 tablespoon unsalted butter
- 2 tablespoons light olive oil, divided
- 2 large chicken breasts, halved
- 1 teaspoon fine sea salt, divided, plus more, to taste
- 1/2 teaspoon freshly ground black pepper, divided
- 1/2 teaspoon garlic powder
- 8 ounces brown mushrooms, thickly sliced
- 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
- 1/4 cup green onion, chopped, plus more, to taste, for garnish
- 3 cloves garlic, minced
- 1 1/2 cups heavy whipping cream
- 1/2 cup parmesan cheese, finely shredded
- 2 cups fresh baby spinach
Directions
Step 1 -In a large skillet over medium heat, heat the butter and 1 tablespoon of the olive oil.
Step 2 -Season the chicken halves all over with 1/2 teaspoon of the salt, 1/4 teaspoon of the pepper, and the garlic powder.
Step 3 -Add the seasoned chicken halves to the butter mixture and cook until they reach an internal temperature of 165 degrees F, about 3-5 minutes per side.
Step 4 -Transfer the chicken halves to a cutting board to cool.
Step 5 -In the same skillet, add the remaining oil and the mushrooms and sauté, stirring occasionally, until they are lightly golden and the excess liquid has evaporated.
Step 6 -Add the sun-dried tomatoes, 1/4 cup of the green onion, the minced garlic, the remaining 1/2 teaspoon of the salt, and the remaining pepper to the mushrooms and sauté until the garlic is fragrant, about 1 minute.
Step 7 -Stir the heavy cream into the sauce, then sprinkle with the parmesan cheese.
Step 8 -Bring the sauce to a light boil while stirring frequently.
Step 9 -Reduce the heat, then simmer the sauce until it slightly thickens, about 2 minutes.
Step 10 -Season the sauce with the extra salt as needed.
Step 11 -Add the spinach to the sauce and stir until it has just wilted.
Step 12 -Add the chicken halves to the skillet and spoon the sauce over them.
Step 13 -Serve the chicken garnished with the extra green onions.
