A crunchy, golden, nut and coconut-packed crumble sandwich sweet and tart apricot filling is just what you need to impress your friends, loved ones, and even your own taste buds! Blue-Ribbon Apricot Bars are the treat that deserve a victory lap!
Ingredients
- 3/4 cup butter, softened
- 1 cup sugar
- 1 large egg, room temperature
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1 1/3 cups sweetened shredded coconut
- 1/2 cup walnuts, chopped
- 1 (10-12-ounce) jar apricot preserves
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking pan with baking spray.
Step 3 -In a large mixing bowl, add the butter and the sugar and using an electric handheld mixer, beat until it is combined, light, and fluffy, about 5-7 minutes.
Step 4 -Add the egg and the vanilla to the butter mixture and beat to combine.
Step 5 -In a small bowl, add the flour and the baking powder and whisk to combine.
Step 6 -Gradually add the flour mixture to the butter mixture, mixing well, until just combined into a dough.
Step 7 -Add the coconut and the walnuts to the dough and fold to combine.
Step 8 -In the bottom of the prepared baking pan, press 2/3 of the dough, making sure to spread it out across the entire bottom.
Step 9 -Add the apricot preserves to the dough layer in the baking pan and spread it out evenly.
Step 10 -Evenly crumble the remaining dough over the top of the preserve layer.
Step 11 -Bake until the crumble on top is golden-brown, about 30-35 minutes.
Step 12 -Transfer the baking pan to a wire rack to cool completely.
Step 13 -Cut into bars and serve.
