If you are yearning for a meal to take you back to your childhood, this is the one! You can almost smell Granny's Chicken & Dumplings just reading this! Chicken and veggies are slowly simmered in a delicious thick broth, then the dumpling batter is dolloped on top and steamed to fluffy perfection. Ingredients
- 5 tablespoons cold unsalted butter, divided
- 1 small yellow onion, minced
- 1 stalk celery, thinly sliced
- 2 carrots, medium-diced
- 1 1/4 cups all-purpose flour, divided
- 3 cups chicken broth
- 2 cups chicken, cooked and diced
- 1/3 pound green beans, trimmed, cut into 1-inch pieces
- table salt, to taste
- black pepper, to taste
- 1 teaspoon baking powder
- 1 teaspoon coarse salt
- 2 tablespoons fresh parsley, chopped
- 1/2 cup whole milk
- fresh chives, optional, to taste, for garnish
Directions
Step 1 -In a large saucepan over medium-high heat, melt 3 tablespoons of the butter.
Step 2 -Add the onions, the celery, and the carrots to the melted butter and cook, while stirring frequently, until the onions are translucent, about 4 minutes.
Step 3 -Add 1/4 cup of the flour to the onion mixture and cook, while stirring constantly, until the raw flour smell disappears, about 1 minute.
Step 4 -Gradually add the chicken broth to the onion mixture, while stirring constantly, and bring the mixture to a boil.
Step 5 -Reduce the heat to medium-low and simmer the onion mixture until thickened slightly, about 5 minutes.
Step 6 -Add the chicken, the green beans, the table salt, and the black pepper to the onion mixture and stir to combine.
Step 7 -In a large bowl, add the remaining flour, the baking powder, the coarse salt, and the parsley and whisk to combine.
Step 8 -Add the remaining cold butter to the flour mixture and cut it in with a fork to combine.
Step 9 -Add the milk to the flour mixture and stir to combine into a batter.
Step 10 -With a large spoon, drop the batter mixture over top of the chicken mixture.
Step 11 -Cover the saucepan and simmer until the dumplings are cooked through and a toothpick inserted into the center of the largest dumpling comes out almost clean, about 12 minutes.
Step 12 -Serve topped with the chives.
