You don't need a frying pan to enjoy the roasted flavors of fajitas. Easy Oven Fajitas only asks that you slip everything into the oven and presto! Crispy, fresh-flavored bell peppers, sweet onions, and tender chicken piled high on tortillas. Easy Oven Fajitas have a caramelized seasoning crust over the top that makes them even more delectable while adding a touch of heat and sweetness. You'll be remaking this recipe over and over again, and that's a promise!
Ingredients
- 1 tablespoon chili powder
- 1/2 tablespoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/8 teaspoon cayenne pepper
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 small onions, sliced into 1/4-inch strips
- 3 bell peppers, any color, sliced into 1/4-inch strips
- 1 pound chicken breast, sliced very thin
- 2 tablespoons vegetable oil
- 1/2 medium lime, plus more, to taste, for serving
- 8 (6-inch) tortillas
- 1/2 cup sour cream, optional, for serving
- 1/4 bunch cilantro, optional, chopped, for serving
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Mix the chili powder, the paprika, the onion powder, the garlic powder, the cumin, the cayenne pepper, the sugar, and the salt together in a small bowl.
Step 3 -Place the onions, the bell peppers, and the chicken in a large 13x15-inch casserole dish or a similarly large baking sheet.
Step 4 -Drizzle the vegetable oil over the chicken and the vegetables.
Step 5 -Sprinkle the fajita seasoning mix over the top of the chicken and the vegetables.
Step 6 -Use your hands to toss the ingredients until everything is well-coated in both the oil and the seasoning.
Step 7 -Bake, stirring once halfway through, until the vegetables are tender, the seasoning mixture is caramelized, and the chicken reaches an internal temperature of 165 degrees F, about 35-40 minutes.
Step 8 -Squeeze the lime half over the top of the meat and the vegetables after they come out of the oven.
Step 9 -In a dry skillet over medium-low heat, toast each of the tortillas until lightly browned on each side, about 2 minutes per side.
Step 10 -Scoop a small amount of the roasted meat and the vegetables into the center of each of the toasted tortillas.
Step 11 -Serve with the sour cream, the cilantro, and the extra lime.
