It may be one of the smallest in the pasta family, but orzo brings so much to the table. Delicious Pasta Salad welcomes orzo as its main attraction and it's such a great choice! When added to flavorful garbanzo beans, spicy red onion, fresh spinach, juicy diced tomatoes, and its perfect match of sharp feta cheese. It's orzo's time to shine! The zesty dressing doesn't hurt either! Delicious Pasta Salad is an awesome salad to keep on hand for any occasion and meal. Small, but mighty and oh, so delicious!
Ingredients
- 1 1/2 cups orzo pasta
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon sugar
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon garlic powder
- 1 (15.5-ounce) can garbanzo beans, drained and rinsed
- 1/3 cup red onion, finely chopped
- 2 cups fresh spinach, chopped
- 1 1/2 cups tomatoes, diced
- 1/2 cup feta cheese, crumbled
- salt, to taste
- black pepper, to taste
Directions
Step 1 -In a pot of salted, boiling water, cook the orzo to al dente, according to the package directions.
Step 2 -Drain the orzo and transfer it to a large bowl.
Step 3 -In a small bowl, add the olive oil, the red wine vinegar, the lemon juice, the sugar, the Dijon mustard, and the garlic powder and whisk to combine.
Step 4 -Add the garbanzo beans, the red onion, the spinach, the tomatoes, and the feta cheese to the cooked orzo and stir to combine.
Step 5 -Add the dressing mixture, the salt, and the black pepper to the orzo mixture and toss to combine.
Step 6 -Transfer the pasta salad to the refrigerator and let it marinate until the flavors meld together, about 1 hour.
Step 7 -Serve.
