Ingredients
- 2 cups all-purpose flour
- 2 cups old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 1 cup unsalted butter, room temperature
- 1 cup Biscoff cookie butter
- 1 1/3 cups light brown sugar, packed
- 1/3 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 cup salted caramel sauce, store-bought or homemade
- flaky sea salt, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Generously coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a large bowl, add the flour, the oats, the baking soda, the cinnamon, and the sea salt and whisk to combine.
Step 4 -In the bowl of a stand mixer, add the butter, the cookie butter, the light brown sugar, and the granulated sugar and beat, scraping down the sides of the bowl with a spatula, as needed, until it is smooth, about 2 minutes.
Step 5 -Add the eggs and the vanilla extract to the butter mixture and mix until it is combined.
Step 6 -Add the flour mixture to the butter mixture and mix until it is just combined.
Step 7 -Evenly press 1/2 of the dough into the prepared baking dish.
Step 8 -Bake the cookie crust, about 12 minutes.
Step 9 -Transfer the baking dish to a wire rack and drizzle the cookie crust with the caramel sauce.
Step 10 -Use a spatula to place the remaining dough on top of the caramel sauce and carefully spread it out as much as possible.
Step 11 -Use lightly dampened hands to gently press the dough into the top of the caramel layer.
Step 12 -Bake the cookie bars until they are golden-brown, about 24-30 minutes.
Step 13 -Transfer the baking dish to the wire rack and let the cookie bars cool completely.
Step 14 -Sprinkle the bars with the flaky sea salt, cut into squares, and serve.
