Ingredients
- For the crust:
- 1 (11-ounce) box vanilla wafers, crushed
- 1/2 cup butter, melted
- 1/2 teaspoon salt
- For the filling:
- 1 (8-ounce) package cream cheese, room temperature
- 1/2 cup butter, room temperature
- 2 cups powdered sugar
- 1 (20-ounce) can crushed pineapple, well-drained
- 1 (8-ounce) tub whipped topping, thawed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a 9x9-inch baking pan with foil.
Step 3 -In a medium bowl, add the crushed wafers, 1/2 cup of the melted butter, and the salt and stir to combine.
Step 4 -Evenly press enough of the crust mixture to cover the bottom of the prepared pan. Reserve the remaining crust mixture for garnish.
Step 5 -Bake the crust until it is lightly golden, about 5-7 minutes.
Step 6 -Let the crust cool completely.
Step 7 -While the crust is cooling, in the bowl of a stand mixer fitted with the paddle attachment, add the cream cheese and the remaining butter and beat on medium speed until it is smooth.
Step 8 -Add the powdered sugar to the cream cheese mixture and beat until it is incorporated with no lumps.
Step 9 -Reduce the mixer's speed to low and carefully add the pineapple to the cream cheese mixture. Beat until well-combined.
Step 10 -Fold the whipped topping into the filling mixture.
Step 11 -Spread the filling onto the cooled crust.
Step 12 -Let the cheesecake chill in the refrigerator for at least 3 hours and up to overnight.
Step 13 -Cut the cheesecake into squares.
Step 14 -Serve the cheesecake squares garnished with the reserved crust mixture.
