Buttery, crunchy, salty, crispy, and chocolatey, yep, these Potato Chip Bites just about mark off every single craving we desire when it's time for dessert! And they're super easy to make, which is perfect for when the craving needs to be tamed quickly. All you do is make some cookie-like bites (complete with salty chips mixed in for the ultimate texture), let them chill, then bake. Now, this is where the magic happens! Potato Chip Bites become mind-blowingly amazing after they're dipped in melty chocolate and sprinkled with a bit more of those crispy chips to make all your sweet-and-salty dreams come true. Beware, you might get a hankering for these every day... they're just so good!
Ingredients
- 2 cups butter, softened
- 1 1/4 cups sugar
- 3 teaspoons vanilla extract
- 3 1/2 cups all-purpose flour
- 2 1/3 cups potato chips, crushed, plus more, to taste, for garnish
- 2 cups semisweet chocolate, melted
Directions
Step 1 -In a large bowl, add the butter and the sugar and mix with an electric hand mixer until it is light and fluffy, 5-7 minutes.
Step 2 -Beat the vanilla into the butter mixture.
Step 3 -In a second bowl, add the flour and 2 1/3 cups of the crushed chips and whisk to combine.
Step 4 -Gradually beat the chip mixture into the butter mixture.
Step 5 -Divide the dough in half and shape each piece into a 10-inch-long log.
Step 6 -Wrap the dough logs and refrigerate until they are firm, about 1 hour.
Step 7 -Preheat the oven to 350 degrees F.
Step 8 -Unwrap the dough logs and cut them crosswise into 1/2-inch-wide slices.
Step 9 -Place the dough slices 1 inch apart on one or two ungreased baking sheets.
Step 10 -Bake the bites until the bottoms are lightly browned, about 10-12 minutes.
Step 11 -Transfer the baking sheets to a wire rack and let the bites cool, about 2 minutes.
Step 12 -Place the bites on the wire rack and let them cool completely.
Step 13 -Pour the melted chocolate in a bowl.
Step 14 -Dip each of the bites halfway into the melted chocolate, letting the excess drip off.
Step 15 -Place the chocolate-coated bites on waxed paper and sprinkle with the extra potato chips.
Step 16 -Let the coated bites rest until the chocolate has hardened.
Step 17 -Serve.
