This little but mighty imposter is packed with all the same creamy, cheesy bacon goodness you have grown to love with a healthy twist that won't leave you feeling guilty. When you unearth the great flavors of this quick and worth-it side dish, your family and guests will be requesting it nonstop! The next time you need a little guilty pleasure added to your anytime menu, Loaded Low-Carb Cauliflower Casserole is it. Everyone will love what you've done for them!
Ingredients
- 3 cups riced cauliflower, thawed
- 2 tablespoons butter, melted
- 2 cloves garlic, minced
- 2 tablespoons dried chives
- 1 cup sour cream
- 3 cups cheddar cheese, shredded, divided
- 1 pound bacon, cooked and crumbled, divided
- kosher salt, to taste
- black pepper, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly grease a 9-inch square baking dish.
Step 3 -In a large bowl, add the cauliflower, the butter, the garlic, the chives, the sour cream, 2 cups of the cheese, and all but 1/4 cup of the crumbled bacon and stir to combine.
Step 4 -Taste the cauliflower mixture and season with the kosher salt and the black pepper.
Step 5 -Transfer the cauliflower mixture to the prepared baking dish.
Step 6 -Top the seasoned cauliflower mixture with the remaining cheese and the remaining bacon.
Step 7 -Bake the casserole, uncovered, until the cheese has melted and is bubbly, about 20 minutes.
Step 8 -Plate and serve.
