Healthy Vegetable Stew, for example, piles on the garden fresh, sweet, tender, and leafy flavors and enhances them with aromatic, savory garlic and the herbaceous wholesomeness of Italian seasoning. That way, Healthy Vegetable Stew tastes and feels filling and welcoming with every sip. This is a handy dish to have when you're trying to count calories or up your nutrition game; it's good and good for you!
Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 medium red bell pepper, chopped
- 2 cloves garlic, minced
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon ground pepper
- 1/4 teaspoon salt
- 8 cups low-sodium vegetable broth
- 1 medium head green cabbage, halved and sliced
- 1 large tomato, chopped
- 2 teaspoons white wine vinegar
Directions
Step 1 -Heat the oil in a large pot over medium heat.
Step 2 -Add the onion, the carrots, and the celery to the oil and cook, while stirring, until the vegetables begin to soften, about 6-8 minutes.
Step 3 -Add the bell pepper, the garlic, the Italian seasoning, the pepper, and the salt to the vegetable mixture and cook, while stirring, for 2 minutes.
Step 4 -Add the broth, the cabbage, and the tomato to the vegetable mixture and increase the heat to medium-high.
Step 5 -Bring the mixture to a boil and then reduce the heat to maintain a simmer.
Step 6 -Partially cover the pot and cook until all the vegetables are tender, about 15-20 minutes.
Step 7 -Transfer the pot from the heat and stir in the vinegar.
Step 8 -Serve.
