Have mercy! This Full House™ Breakfast is fit for any family... no matter its size or dynamic! Filled with lots of wholesome morning fun, like fluffy eggs, crispy bacon, crunchy hashbrowns, spicy sausage, and tender veggies, you'll want to hug it out with everyone around the table! And when your crazy, unwelcomed neighbor barges in and says she doesn't want to indulge, you might feel compelled to exclaim, "How rude!" Followed by, "Cut it out, you have to try it!" And the wisest one in the room will make everything better with a mini, uplifting lecture that teaches you a life lesson, as soft music randomly starts to play in the background. Holy Tannerittos! Full House Breakfast really brings the family together... and we wouldn't have it any other way. You got it, dude!
Ingredients
- 1 pound thick, center-cut bacon, sliced and diced
- 1 pound breakfast sausage
- 1 medium red onion, diced
- 2 large red bell peppers, diced
- 6 large eggs
- salt, to taste
- pepper, to taste
- 32 ounces frozen diced hashbrown potatoes
- 3 cups sharp cheddar cheese, shredded, divided
Directions
Step 1 -Coat the inside of a 6-quart slow cooker with cooking spray.
Step 2 -In a large frying pan over medium heat, add the bacon and cook until crisp.
Step 3 -Transfer the bacon to a paper-towel-lined plate to drain.
Step 4 -Discard the grease from the pan.
Step 5 -Add the breakfast sausage, the onion, and the red bell peppers to the same pan and cook, while crumbling the meat, until the onions are translucent and the sausage is no longer pink.
Step 6 -In a bowl, add the eggs, the salt, and the pepper and whisk to combine.
Step 7 -Add the hashbrowns, the cooked bacon, and the sausage mixture to the prepared slow cooker.
Step 8 -Sprinkle the sausage mixture with 2 cups of the cheese and then add the egg mixture.
Step 9 -Stir the sausage-egg mixture and use the back of the spoon to evenly flatten it out.
Step 10 -Top the sausage mixture with the remaining cheese.
Step 11 -Cover the slow cooker and cook on low heat for 4 hours or on high heat for 2 hours.
Step 12 -Serve.
