Deconstructed Burrito Casserole was made for the Mexican food lover in your life that can't ever get enough! Layers of seasoned ground beef, smooth refried beans, melty cheese, and a tangy tomato and chiles mix are sandwiched between tender corn tortillas and baked to perfection. The result is a flavorful and fulfilling casserole that is perfect for feeding a crowd or enjoying as leftovers throughout the week. The best part? It's easy to make it exactly the way you like it by adding your favorite toppings. Next time your people are craving Mexican food, skip the takeout and try the always mouthwatering Deconstructed Burrito Casserole instead!
Ingredients
- 1 pound lean ground beef
- 1/2 cup onion, chopped
- 1 clove garlic, minced
- 1/2 cup green bell pepper, chopped
- 1 (1-ounce) packet taco seasoning
- salt, to taste
- pepper, to taste
- 1 (16-ounce) can refried beans
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 6 large corn tortillas
- 2 1/2 cups sharp cheddar cheese, shredded, divided
- chives, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a medium Dutch oven or large skillet, cook the ground beef, the onions, the garlic, and the green bell pepper until the meat is no longer pink, about 5-7 minutes.
Step 3 -Add the taco seasoning, the salt, the pepper, the refried beans, and the diced tomatoes with green chilies and their juices to the beef and cook until everything is well-blended and heated through, about 5 minutes.
Step 4 -In a small bowl, whisk the cream of chicken soup and the sour cream together.
Step 5 -Spread 1/2 of the soup mixture in the bottom of a 9x13-inch casserole dish.
Step 6 -Place 3 of the tortillas in one layer on top of the soup mixture, overlapping and cutting the tortillas as needed to fill the spaces between.
Step 7 -Place 1/2 of the meat mixture on top of the tortillas.
Step 8 -Spoon the remaining soup mixture on top of the meat and sprinkle 1/2 of the cheese on top of the soup mixture.
Step 9 -Repeat the tortilla layer and the meat layer and top with the remaining cheese.
Step 10 -Bake the casserole until the cheese has melted and is bubbly, about 20 minutes.
Step 11 -Serve with a sprinkle of the chives.
