Easy but oh, so tasty! Creamy White Bean Chicken Chili is the perfect change of pace you've been looking for! When yummy broth you just can't get enough of gets paired with rotisserie chicken, cannellini beans, Neufchâtel cheese, and a spritz of lime juice, they create a uniquely lovely blend of deliciousness. Served with the toppings of your dreams, from tortilla chips to sliced avocados, Creamy White Beach Chicken Chili is loaded with great taste from the bottom to the top! A change will do you good!
Ingredients
- For the chili:
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, finely minced
- 2 (14.5-ounce) cans low-sodium chicken broth
- 1 (7-ounce) can diced green chiles
- 1 1/2 teaspoons cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- salt, to taste
- freshly ground black pepper, to taste
- 1 (15-ounce) can plus 1 cup cannellini beans, drained and rinsed, divided
- 1 (8-ounce) block Neufchâtel cheese or light cream cheese, cut into small cubes
- 1 1/4 cups frozen corn
- 2 1/2 cups rotisserie chicken, cooked and shredded
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- Optional toppings:
- Monterey Jack cheese, to taste, shredded
- fresh cilantro, to taste, chopped
- avocado, to taste, sliced
- tortilla chips or strips, to taste
Directions
Step 1 -In a large pot over medium-high heat, heat the olive oil.
Step 2 -Add the onions to the heated oil and sauté, about 4 minutes.
Step 3 -Add the garlic to the onion and sauté, about 30 seconds.
Step 4 -Add the chicken broth, the green chiles and their juices, the cumin, the paprika, the oregano, the coriander, the cayenne pepper, the salt, and the black pepper and bring just to a boil, stirring occasionally.
Step 5 -Reduce the heat to medium-low and simmer the chili mixture, about 15 minutes.
Step 6 -Add 1 cup of the cannellini beans and 1/4 cup of the liquid from the chili mixture to a food processor and purée until it is nearly smooth. This step is not necessary, but it will help make the chili creamy and smooth.
Step 7 -Add the puréed bean mixture, the Neufchâtel cheese, the corn, and the remaining can of whole cannellini beans to the chili mixture and simmer, stirring frequently, about 5-10 minutes.
Step 8 -Add the chicken, the lime juice, and 2 tablespoons of the cilantro to the chili mixture and stir to combine.
Step 9 -Serve the chili with your favorite optional toppings.
