Ingredients
- 4 cups mixed berries, fresh or frozen, thawed if frozen
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 (15.25-ounce) box vanilla cake mix
- 8 tablespoons unsalted butter, cut into cubes
- vanilla ice cream, optional, to taste, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9-inch square or oval baking dish with nonstick cooking spray.
Step 3 -In a medium bowl, add the berries, the sugar, the cornstarch, the lemon juice, and the vanilla and stir to combine.
Step 4 -Add the berry mixture to the prepared baking dish, spreading it out evenly.
Step 5 -Evenly sprinkle the cake mix over the top of the berry mixture.
Step 6 -Scatter the butter cubes evenly over the cake mix layer, but do not stir.
Step 7 -Cover the baking dish with aluminum foil.
Step 8 -Bake until the top is golden and the berry mixture is bubbling, about 1 hour.
Step 9 -Remove the foil and bake for another 5 minutes.
Step 10 -Allow the cake to cool for 5 minutes.
Step 11 -Serve with the ice cream.
