Comfort food doesn't get any more comforting than this! Combo Casserole is the perfect collection of comforting tastes. Tender rice, fresh broccoli florets, and juicy chicken breast pieces are all hugged with a creamy cheddar cheese sauce for an exceptionally easy and tasty homestyle meal. Your family will love Combo Casserole when they are yearning for that "glad-to-be-home" meal. It's really just the best combo!
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 chicken breasts, boneless and skinless, cut into small cubes
- 1/4 teaspoon salt, plus more, to taste
- 1/4 teaspoon black pepper, plus more, to taste
- 4 cloves garlic, minced
- 3/4 cup instant rice
- 1 (10-ounce) can cream of chicken soup
- 2 cups low-sodium chicken broth, plus more, to taste
- 2 cups broccoli florets
- 1 cup cheddar cheese, shredded, divided
Directions
Step 1 -Preheat the broiler.
Step 2 -In a large, oven-safe skillet over medium heat, add the oil.
Step 3 -Add the onions and the chicken cubes to the heated oil and cook, stirring occasionally, until the meat starts to brown and is no longer pink, about 5 minutes.
Step 4 -Season the chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper.
Step 5 -Stir the garlic into the chicken mixture and cook until it is aromatic, about 30 seconds.
Step 6 -Add the rice, the cream of chicken soup, and 2 cups of the chicken broth to the chicken mixture and bring to a boil. Add the extra chicken broth, as needed, to ensure the rice is fully submerged.
Step 7 -Reduce the heat to medium, cover the skillet, and cook the chicken mixture, stirring occasionally, until the rice is fully cooked, about 15 minutes.
Step 8 -Taste the chicken mixture and season with the extra salt and the extra pepper, as needed.
Step 9 -Add the broccoli and 1/2 cup of the cheese to the chicken mixture and stir to combine. Cook until the broccoli has slightly softened, about 2 minutes.
Step 10 -Sprinkle the remaining cheese over the chicken mixture.
Step 11 -Broil the casserole until the cheese starts to melt and is lightly brown, about 2 minutes.
Step 12 -Serve.
