Chicken Avocado Pasta Salad brings you so much flavor, so much satisfaction, and so much excitement and it only takes 10 minutes to toss together! Juicy chicken, butter rotini pasta, sweet tomatoes, creamy, avocadoes, and fresh basil... mmm, what a combo it is! Coated in a tangy white-wine vinegar dressing with a hint of Italian seasoning, Chicken Avocado Pasta Salad saves the day in the most delicious way!
Ingredients
- For the salad:
- 2 medium chicken breasts, cooked, shredded or chopped
- 2 ripe avocados, pitted and diced
- 1 pound rotini pasta, cooked
- 1/2 cup red onion, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- salt, to taste
- pepper, to taste
- For the dressing:
- 1/2 cup white wine vinegar
- 1 tablespoon Italian seasoning
- 3/4 cup extra-virgin olive oil
- salt, to taste
- pepper, to taste
Directions
Step 1 -In a large bowl, add the chicken, the avocado, the pasta, the red onion, the tomatoes, the basil, the salt, and the pepper and toss to combine.
Step 2 -In a jar, combine the white wine vinegar, the Italian seasoning, the oil, the salt, and the pepper, cover, and carefully shake to combine.
Step 3 -Drizzle the salad over the dressing and toss to coat.
Step 4 -Serve.
