What's on the to-do list today, gal? Lots of errands, maybe? Taking care of the grandkids? Running the garden club meeting, perhaps? Whoever said retirement would be relaxing was totally wrong... at least for you! And with all that, you still have to get dinner on the table. Well honey, this Busy-Wife Dinner was made for you. All you need is a few minutes and a big appetite for this stack of Tex-Mex deliciousness, featuring hearty ground beef, an assortment of tender beans, an array of veggies, and melty cheese. In no time, you'll be sitting down, relaxing, and enjoying some time with the one you love. And hey, might we recommend that he does the dishes tonight? You deserve a rest and that's why we created the Busy-Wife Dinner! Seriously. Sit down and enjoy!
Ingredients
- For the dinner:
- 1 pound ground beef
- 1 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1 (16-ounce) can pinto or kidney beans, rinsed and drained
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (10-ounce) can diced tomatoes with green chilies, undrained
- 1/3 cup water
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 6 (6-inch) flour tortillas
- Optional toppings:
- tomatoes, to taste, chopped
- fresh cilantro leaves, to taste
- avocado, to taste, sliced
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -In a large skillet, add the beef, the onion, and the green pepper and cook until it is no longer pink.
Step 3 -Drain the excess grease.
Step 4 -Add the pinto beans, the black beans, the diced tomatoes with green chilies and their juices, the water, the chili powder, the ground cumin, the salt, and the pepper to the beef mixture and bring to a boil.
Step 5 -Reduce the heat, cover the skillet, then simmer the beef mixture for 10 minutes.
Step 6 -In a small bowl, combine the cheddar cheese and the Monterey Jack cheese.
Step 7 -In a 9x13-inch baking dish, layer about 3/4 cup of the beef mixture, 1 of the tortillas, and about 1/3 cup of the cheese mixture. Repeat the layers in that order with the remaining ingredients.
Step 8 -Cover the dish with foil and then bake until the cheese has melted, about 7 minutes.
Step 9 -Serve the bake topped with the tomatoes, the cilantro leaves, and the avocado.
