Ingredients
- 1 (8-ounce) package thin spaghetti, broken in half
- 2 tablespoons vegetable oil
- 1 1/2 pounds chicken tenders, cut into bite-size pieces
- 4 stalks celery, sliced
- 2 red bell peppers, sliced
- 1 red onion, sliced
- 2/3 cup carrots, shredded
- 1 cup chicken broth
- 1/2 cup soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1/2 teaspoon sesame oil
- 3/4 cup peanuts, unsalted
- 1 tablespoon garlic, minced
- 1 teaspoon red pepper flakes
- green onions, to taste, sliced, for garnish
Directions
Step 1 -In a large pot of salted boiling water, cook the spaghetti to al dente, according to the package directions and then drain. Set it aside.
Step 2 -In a wok over medium heat, heat the vegetable oil.
Step 3 -Add the chicken pieces to the hot oil and cook, stirring, until the chicken reaches an internal temperature of 165 degrees F, about 5 minutes.
Step 4 -Add the celery, the red bell peppers, the onion, and the carrots to the chicken pieces and cook, stirring, until the vegetables are slightly tender, about 5 minutes.
Step 5 -In a small, separate saucepan, add the chicken broth, the soy sauce, the cornstarch, the garlic powder, and the sesame oil and bring the mixture to a boil.
Step 6 -Reduce the heat to low and simmer until the sauce reaches the desired consistency, about 5-10 minutes.
Step 7 -Add the peanuts, the garlic, and the red pepper flakes to the chicken mixture and cook, stirring, until incorporated and fragrant, about 2 minutes.
Step 8 -Add the sauce mixture and the spaghetti to the chicken mixture and toss to coat.
Step 9 -Serve the spaghetti garnished with the green onions.
