Crisp romaine hearts, savory salami, creamy mozzarella, and spicy pepperoncini all come together for a refreshing and tantalizing mix of fantastic flavors. A simple, tangy, and slightly sour red wine vinaigrette brings everything together into one tasty package. The Best Antipasto Salad is prepared in less than 20 minutes and makes fancy salad preparation a snap. All you need to really do is tuck in your napkin!
Ingredients
- For the salad:
- 2 large romaine hearts, chopped
- 1/2 pound salami
- 8 ounces mozzarella balls, halved
- 1 cup artichoke hearts, quartered
- 1 cup cherry tomatoes, halved
- 1 cup pepperoncini, chopped
- 1/2 cup olives, sliced
- For the vinaigrette:
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon oregano
- 1/4 teaspoon red pepper flakes
- kosher salt, to taste
- freshly ground black pepper, to taste
Directions
Step 1 -In a large bowl toss the chopped romaine, the salami, the mozzarella, the artichokes, the tomatoes, the pepperoncini, and the olives together.
Step 2 -In a jar fitted with a lid, shake together the olive oil, the vinegar, the mustard, the oregano, and the red pepper flakes.
Step 3 -Season the dressing with the salt and the pepper.
Step 4 -Dress the salad with the vinaigrette and serve.
