Ingredients
- 1 pound bacon
- 2 pints cherry tomatoes
- 1 (8-ounce) package cream cheese, softened
- 1 1/2 cups cheddar cheese, shredded
- 1 cup sour cream
- 1 cup mayonnaise
- 3 cloves garlic, finely chopped and mashed into a paste
- 1 romaine lettuce heart, shredded
- 1 tablespoon fresh lemon juice
- bagel chips or crisps, to taste, for dipping
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a large, rimmed baking sheet with aluminum foil and fit with a wire rack.
Step 3 -Arrange the bacon strips in an even layer on the wire rack and bake until they are crisp, about 30-35 minutes.
Step 4 -Transfer the baking sheet to a wire rack. Reserve 1 tablespoon of the bacon grease and discard the rest. Allow the bacon strips to cool.
Step 5 -Chop the cooled bacon strips and set aside.
Step 6 -In a mixing bowl, add the tomatoes and the reserved bacon grease and toss until they are well-coated.
Step 7 -Spread the tomatoes on a second rimmed baking sheet and bake until they burst, about 10 minutes.
Step 8 -Transfer the baking sheet to a wire rack and let the roasted tomatoes cool slightly.
Step 9 -Reduce the oven temperature to 350 degrees F.
Step 10 -In a large bowl, add the cream cheese, the cheddar cheese, the sour cream, the mayonnaise, the garlic, 1 cup of the chopped bacon, and 1 cup of the roasted tomatoes.
Step 11 -Pour the dip into a 2-quart baking dish and bake until it is hot and bubbly, about 15-20 minutes.
Step 12 -Transfer the baking dish to a wire rack and top with the lettuce, the remaining roasted tomatoes, and the remaining chopped bacon.
Step 13 -Drizzle the dip with the lemon juice.
Step 14 -Serve the dip with the bagel chips.
